Jiro Dreams of Sushi plot
"Fall in love with your work"
"I will do my best to reach the top." Strange words to hear from the mouth of an 85-year-old man who has been in the business for some 75 years. Master chef Jiro Ono runs the three-star restaurant Sukiyabashi Jiro in the heart of Tokyo. In his small restaurant – barely 10 places! – Jiro focuses on the art of sushi making. With a sense of Japanese discipline, Jiro has been working diligently for 75 years on his dream of one day making the perfect sushi. His youngest son has been in charge of the second branch of Jiro's restaurant for years, while his eldest son Yoshikazu - already over fifty - is being groomed for the succession to the throne.

As an idea for a fun evening I went to watch this documentary last night and immediately afterwards I visited what is said to be the best sushi restaurant in Amsterdam. The documentary was really fine. I especially liked seeing those people make the food 'nice and simple'. The intermezzos with suppliers also give a nice insight and the images on the Tsukiji fish market (once visited myself and then unfortunately just too late for the fish auction) are the highlight of this.
However, at one point the documentary was a bit against me. I got the feeling more and more that yes, you are undoubtedly rock solid, but you are also just as good at marketing. Every effort is also made to consciously put the right image in the limelight as business people. Over time, that fake overshadows the sincere and that doesn't feel quite right.
Anyway, it looked nice and luckily I ate well afterwards. Thanks to Jiro I have selected a nice over-representation of tuna on my plate.

Nice, captivating documentary about master chef Jiro Ono, who runs the three-star sushi restaurant Sukiyabashi Jiro in Tokyo. Not just a beautiful portrait of an imperturbable workaholic; there is also a lot of attention for his two sons, who will succeed him in the foreseeable future. Beautifully photographed, with of course many shots of delicious-looking sushi.

Gelb's portrait of sushi master Jiro Ono and his sons is an ode to the dedication it takes to reach the absolute top in any field. Restaurant Jiro has had 3 Michelin stars for many years, can only accommodate 10 visitors who sometimes have to book months in advance and as long as the guests can tolerate it, Jiro will continue to work. Not only does Gelb speak with Jiro and his sons - the eldest of whom will one day succeed him - but also follows them in their search for the right ingredients and encounters a number of equally idiosyncratic figures who play a key role in preparing the main culinary dishes. . A fascinating behind-the-scenes look at the best sushi restaurant in the world, complemented by a critical note about the consequences of overfishing.
