Devote fans, ramen heads, travel across town and country in search of the ultimate ramen. They have hours of queues for it. Tomita Osamu has been named Japan's best ramen chef for three consecutive years. His ingredients and working method are explained in detail. He has no secrets, but he is obsessive: always looking for the best dried sardines or the tastiest pork head for his stock.
