Restaurant kitchens are a stew under the pressure of brutal hours, high stress and sleep deprivation. The well-known macho attitude of star chefs has reached a tipping point. With an influx of women at the helm of restaurants and a younger generation unwilling to submit to harsh conditions once considered the norm, the rules of "kitchen culture" as we know them are being rewritten once again.
